When you make homemade Mac and cheese, what cheeses do you use and what add-ins do you like?

I tend to start with a bit of cheddar first and mix with a 6 month to 12 month comte. I'll also use brie, manchego and gruyere in different amounts.

My most common add-ins are ham or bacon but sometimes I'll make a Buffalo sauce and add that in if I only use cheddar. Inexpensive crab claw meat compared to lump crab is great too and lobster of course.

Speaking of crab, I like to put a scallop inside each crab cake I form. It's actually less expensive than using all crab and people think they are getting something special. Then right at the end hit it with the broiler just like the Mac and cheese.

Don't forget to make a nice top layer of mozerella cheese or sprinkle some seasoned bread crumbs on the top to lightly brown.

Maybe a tiny bit similar but the process is a bit different. I use shredded chicken to make Buffalo chicken dip sometimes. Alfredo is kinda a sauce that you add at the end and generally on a stove not baked.

Though cooking pasta in alfredo or a tomato based sauce in the last half is better than fully cooking the pasta first in water then adding.

Oh, sprinkling nutritional yeast in your Mac and cheese also is tasty and gives it a bit of nutrition.
